Little Creek Casino Resort collects thousands of toys and

hundreds of winter coats for families in need.

 

Shelton, WA December 23, 2008- In demonstrating an ongoing commitment to the community and charitable support services, Little Creek Casino Resort in Shelton WA launched its Winter Wonderland Fundraiser. Mason, Thurston County, and other surrounding residents rallied to collect toys and warm winter coats for needy families. Cameron Goodwin, General Manager of Little Creek Casino Resort stated “ It was so amazing to see how many different kinds of toys came through, and how many jackets were brought. I’m happy to see that we are able to help families that are in need of these items”.

 

With overwhelming community support Little Creek Casino Resort was able to provide thousands of toys and hundreds of winter coats to families in the surrounding Counties. Little Creek packed company vehicles full of toys and winter coats, when Mason County Fire District # 4 came to pick up these appreciated gifts, their ambulance was stuffed full too. Little Creek was able to share the generosity with other organizations such as Mason County Homeless Shelter, Mason General Hospital, Anchor Bank Foster Care, Squaxin Island Tribe Foster Care and the United States Marines Toys for Tots.

 

Kim Burrow, Director of Hotel Operations expressed “In these tough economic times, I am overwhelmed by the sheer generosity and would like to thank the many community members, employees and hotel guests who participated in the fundraiser this holiday season”. The Winter Wonderland fundraiser hotel package includes a one-night stay, dinner for two and a free espresso. This package is available Sunday thru Thursday until January 15, 2009. Local Man wins Progressive Jackpot of over $750,000
at Little Creek Casino Resort

Shelton, WA July 8th, 2008- Donald Bishop, a 66 year old retired man from Olympia, Washington got the surprise of his life while playing the Cadillac Cash progressive games at Little Creek Casino Resort. Mr. Bishop was down to his last $10 when the jackpot of $760,877.02 hit. It was an exciting time for Mr. Bishop and the casino staff alike. Once the bars lined up to reveal his win, bells, whistles and music sounded. The luminescent flat screen TV above the banks of machines displayed “Progressive Jackpot Win!”
 
Mr. Bishop enjoys playing at Little Creek Casino Resort and is known by the staff, who describe him as a “Friendly, appreciative and humble man.” When asked the question of what he was planning to do with the money he responded with “I am going to take my wife on a trip, and use the rest to help me enjoy my retirement!”

Mary Ellen Psaltis reviews Chef Peralta Seafood Delight - 2007

Have you been to a restaurant that offers a signature dish? I know that it is supposed to mean the recipe will be unique and especially good, but sometimes I wonder. Whose signature is it? Does it belong to the chef or the owner or anyone? I mean, anymore, you can't even read most people's signatures. Now an autograph might be something worthwhile.

 

On a recent visit to the Little Creek Casino Resort's Island Grille, I was presented with one of their signature dishes. I was in for a few surprises. The Squaxin Island Seafood Delight is an elegant vision of artfully placed seafood. We have heard that beauty is only skin deep, but this masterpiece was good through and through. I have met too many tough, bland lobsters, but this one was tender and creamy. The shrimp was also sweet and cooked just enough. But the best part was the sauce - my oh my. I like seafood but I don't like a fishy taste. This was just right. The flavors were complex and deep, and melted over my tongue - reminding me to appreciate every forkful.

 

Chef John Peralta is behind this feast of flavor. Originally from Hawaii, his background is a cultural mix that supports his attitude of "let's go for the creative." Peralta smiles and says, "I really, truly love cooking." He finds his inventive outlet in putting together memorable dinners. As he notes, the "fun is in the dinner."

 

I know that the secret of this dish is in making your own seafood stock. Most of us don't have the time, inclination or access to all the fish parts that go into simmering what becomes a rich base for sauces. This process takes hours at least - and even days. Brewing a fish stock is a lengthy process of cooking down pieces of fish and fish bones, then adding mirepoix, a classic vegetable mixture of carrots, onions and celery.

 

This liquid is reduced and spices are added. Some choose to roast the meat/fish or vegetables before they are simmered into that liquid gold called stock.

I don't know if you can get a caliber of fish stock from a jar that is even close to Peralta's sauce. Probably not. That is one advantage restaurants have over most households; they make their own stocks from their own supplies. This is too bad for us eating at home, but it does make eating out a treat.

 

As I mentioned, the Squaxin Island Seafood Delight is a signature of their talented young chef John Peralta, and he has two more that I haven't yet had the chance to eat. If the Seafood Delight is Peralta's signature, then I'd put it in the category of an autograph - totally worthwhile, but much better tasting. Bon Appetit!

 

Squaxin Island Seafood Delight
Per person

Lobster tail
Salt and pepper to taste
Fresh lemon juice
Split and cross cut

Season tail and cook for 18 -20 minutes in a 450 degree oven

3 prawns (larger sized -16-20 per pound)
One-quarter cup diced tomatoes
1 teaspoon chopped garlic
1 tablespoon butter
Salt and pepper to taste
One-third cup white wine (more or less)
Fresh basil, chopped

Peel and drain prawns. Lightly sauce in butter and garlic. Add salt, pepper, tomatoes, and basil.

Seafood sauce

1 cup seafood stock
1 cup white wine
1 cup heavy cream
Salt and pepper to taste

 

Put in a pan and gently reduce to a honey thickness

Arrange shrimp and lobster on a plate in a ladle of creamy seafood sauce. Grilled vegetables are an excellent accompaniment.

Hint: It takes about 2 pounds of fish parts to render one pint of stock.

 


 

Little Creek Casino Resort Launches Food Donation Program

Shelton, WA, November 21st, 2007 - In demonstrating an ongoing commitment to community and charitable support services, Little Creek Casino Resort, in Shelton WA , launched a local food donation program as a part of its "Fall into Fun" hotel package. The Local recipient of the program was the Saint's Pantry Food Bank located at 214 South 2nd street in downtown Shelton. 

 

Little Creek Casino Resort collected over 1,000.00 pounds of nonperishable food and delivered it to the Saint's Pantry. Kim Burrow, Director of Hotel Operations at Little Creek Casino Resort said,  "She was overwhelmed by the response from their extremely gracious patrons!" Because of this wonderful response, Kim Burrow initiated yet another hotel stay package so appropriately named the "Winter Wonderland" which has already brought in well over 20 new children's coats and more than 100 new unwrapped toys.

Tee it up for Tots. - June 1st, 2007

Grays Harbor Radio held its Second Annual "Tee it up for Tots" charity golf tournament at the beautiful Grays Harbor Country Club on June 1st, 2007. The weather was absolutely great and everyone had a good time. All proceeds went to Habitat for Humanity-Grays Harbor and The Grays Harbor Community Hospital Foundation. The first place winning team was Little Creek Casino Resort headed up by David Black, Director of Marketing. Congratulations to David and his team and to one and all for participating in this fine event and worthy cause.
